Coconut Rice with Raisins / Arroz con Coco con Uvas Pasas


Ingredients:
- 1 coconut
- 1 pound parboiled rice
- 5 tablespoons sugar
- 1 tablespoon salt
- 1 cup raisins

Preparation:
To extract the coconut milk from the coconut, you have to open a hole in one of the 3 "little eyes" that the coconut has.
Drain the water and crack the coconut open using a hammer. Then you have to separate the coconut from the shell by prying a knife between the coconut and the shell. Put the coconut pieces in a blender with 1 1/2 cups of hot water and blend. Use a strainer to extract the first coconut milk, this must be thick. Then add more water and repeat the same process until you obtain double the number of cups than those of rice that you are preparing.
Put in a pan (or whatever you are going to use to prepare the rice), the first batch of milk and let it simmer, stir with a wooden spoon until the milk gets oily and small brown pieces start to appear. That's called "Titoté".
After you get the "Titoté" you are going to add 3 cups of rice, 6 cups of coconut milk (from the second coconut extraction), 5 spoons of sugar, 1 spoon salt, and 1 cup of raisins, stir. Let it simmer in medium high, until it gets dry. After that, put the lid on the pan and cook on low until the rice is done.

Ingredientes:
- 1 coco
- 1 libra de arroz parabolizado
- 5 cucharadas de azúcar
- 1 cucharada de sal
- 1 taza de uvas pasas

Preparación:
Para extraer la leche de coco, del coco, tienes que abrir un hueco en uno de los 3"pequeños ojos" que tiene el coco.
Saca toda el agua y parte el coco con usando un martillo. Luego tienes que separar el coco de su cascara ayudandote de un cuchillo para separar la carne del coco de la cascara. Coloca el coco (sin cascara) en pequeños pedazos en la licuadora con 1 1/2 taza de agua caliente y licua. Usa un colador para extraer la primera leche del coco, esta debe ser espesa. Luego añade mas agua y repite la operación hasta que obtengas el doble de numero de tazas de arroz que vas a preparar.
Pon en un caldero (o en la olla que vayas a preparar el arroz), la primera leche de coco y dejala reducir, revuelve con una cuchara de palo hasta que la leche de coco se torne aceitosa y aparezcan pequeños pedazos cafecitos. Eso es lo que llamamos "Titoté".
Después que obtienes el "Titoté" vas a agregar las 3 tazas de arroz, las 6 tazas de leche de coco (de la segunda extracción), 5 cucharadas de azúcar, 1 cucharada de sal, y 1 taza de uvas pasas, revuelve. Deja que hierva a fuego medio alto, hasta que seque. Después que ha secado, coloca la tapa y cocina a fuego bajo hasta que el arroz este en su punto.
