Stuffed Pears with Amaretto and Goat Cheese / Peras Rellenas con Amaretto y Queso de Cabra
Ingredients: - 12 honey graham crackers - 1/4 teaspoon ground cinnamon - 3 large firm yet ripe pears, at room temperature (peeled if you want) - 1/3 cup almond-flavor liqueur (you can use Amaretto, if you don't have and don't want to buy use Rum) - 3 tablespoon freshly squeezed orange juice - 2 teaspoon fresh grated orange peel - 3 oz goat cheese, crumbled (about 6 tablespoon) - 1/4 cup chopped pecans, toasted and caramelized Preparation: Place cookies and cinnamon in a zipper seal bag, crush cookies using a rolling pin. Remove and set aside 2 tablespoon crumbs. Cut pears in half lengthwise. Using a teaspoon, remove and discard the core from each half. Scoop out and chop and additional 2 teaspoon from the center of each pear. Place chopped pear into a small bowl. Add the cookie crumbs from the baggie, amaretto, orange juice and orange peel.
