Carrot, Apple and Celery Soup

Ingredients:

* 2 pounds carrots, diced
* 1 medium onion, chopped
* 3 celery stalks, trimmed and diced
* 4 cups vegetable stock
* 3 medium size apples
* 2 tbsp tomato paste
* 1 bay leaf
* 2 tbsp sugar
* 1/2 can NESTLE light table cream (or regular table cream)

Preparation:
Placed the carrots, onion and celery in a large saucepan and add the vegetable stock. Bring to a boil, cover and simmer for 10 minutes.
Meanwhile, peal the apples. Add the pieces of apples, tomato paste, bay leaf, sugar to the saucepan and bring to a boil.
Reduce the heat, half cover the pan and allow to simmer for 20 minutes. Remove and discard the bay leaf.
Place the mixture in a blender or food processor and blend until smooth. Add 1/2 can NESTLE table cream and mix again.
Gently reheat the soup if necessary and season with salt and pepper to taste.

Ideas: You can use the following toppings to serve the soup, croutons, bleu cheese or apple slices and shredded celery leaves.
