Skewered Spicy Tomato Chicken
Ingredients:
- 1 pound skinless, boneless chicken breast
- 3 tablespoons tomato paste
- 2 tablespoons clear honey
- 2 tablespoon Worcestershire sauce
- 9 ounces cherry tomatoes
Preparation:
Cut the chicken into 1-inch chunks and place in a bowl.
Mix together the tomato paste, honey, and Worcestershire sauce. Add to the chicken, stirring to coat evenly and thoroughly. Alternating the chicken pieces and cherry tomatoes, thread them onto eight wooden skewers.
Spoon over any remaining glaze. Cook under a preheated broiler for about 8 to 10 minutes, turning occasionally, until the chicken is thoroughly cooked.
Served on a bed of couscous or rice.
