Poached Halibut with Lemon-Herb Sauce
Ingredients:
- 3 tablespoons olive oil
- 1 tablespoon grated lemon rind
- 1 1/2 tablespoons fresh lemon juice
- 4 teaspoons chopped fresh parsley
- 4 teaspoons chopped fresh cilantro
- 1/2 teaspoon salt
- 3 lemon sections, finely chopped
- 1 1/2 tablespoon chopped seeded jalapeño pepper (optional)
- 6 cups water
- 1 teaspoon salt
- 1/2 teaspoon black peppercorns
- 2 green onions, coarsely chopped
- 1 parsley sprig
- 1 cilantro sprig
- 4 (6 ounce) halibut fillets
Preparation:
Combine first 7 ingredients, if you like spicy food then add the 8 ingredient on the list.
Next in a large skillet combine water and next 5 ingredients; bring to a low simmer. Add fish, cook for about 10 minutes or until is done.
Remove fish from pan with slotted spoon; drain on paper towels. Serve with the mix that you prepare in the beginning.
